There’s a difference in fat molecule size.  The fat molecules in goat’s milk are much smaller than the fat molecules in cow’s milk. It’s naturally homogenized; smooth and consistent without it undergoing a man-made process which is a necessity for the cow’s milk. It contains less lactose (milk sugar) than cow’s milk, which makes it easier on our stomachs simply because we need less of a particular type of enzyme to break down the lactose. It’s less allergenic due to the protein contents. One of the most common allergies in children under the age of 3 is a dairy-allergy and it has a lot to do with a particular protein in the milk called Alpha s1 Casein. The levels of Alpha s1 Casein are about 89% less in goats milk which is one of the main reasons why people who have dairy sensitivities may get away with consuming goats milk as an alternative.

Our goats are fed with the finest alfalfa and quality hay gathered from Konya, Aydin and Balikesir plains.  We work with experts on goat feeding and feed our goats naturally produced and formulized specially for Baltali Farm.  We do not use any hormones to induce more milk from our goats and do not process goat milk contaminated with antibiotics.

At Baltali Dairy we reflect a way of life that is against the use of additives to prolong the shelf life of our products for economic reasons.  We thus refuse to include any additives or preservatives in our products for the sake of more profitability that would contradict with human health and process goat milk accordingly.

In an effort to keep the milk yield at maximum, we have been using pure blood Saanen bucks to inseminate local dairy goat breeds.  We are now content to say that we have bred high yielding studs which are Middle East adopted what we call “Turkish Saanen Goat Breed” special to Baltali Farm.

Apart from our own farm, we do contract farming and buy %100 goat milk from a number of goat farms that have high quality, high yielding dairy goats.

It is because our milk is pasteurized to neutralize the unhealthy microorganisms within the raw milk.   Boiling already pasteurized milk is a wrong process that would damage the structure of milk.  We urge our customers to warm our milk and not to boil it before drinking.

We transfer our products in cold chain as they leave our warehouses.  Yet from time to time, quality problems start when cold chain is broken beyond our control during the transformation or storage of our products.  For any complaints, please contact our hotline service.

We use salt as a natural preserver.  Getting a “less salty” or a “very salty” taste changes from person to person.   Yet for those of our customers who prefer a less salty cheese, we recommend them to leave it in the water for a while; or try our Baltali Goat Buche.
